Ingredients:
- 1 and 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 4 oz cream cheese, softened
- 2 large eggs
- 1/4 cup fresh lemon juice
- 2 tsp lemon zest
- 1 tsp vanilla extract
- 1/2 cup milk
- 1/2 cup powdered sugar for glaze
- 1 tbsp fresh lemon juice for glaze
- 1/2 tsp lemon zest for glaze
Instructions:
Warm your oven up to 350 F 175C and put paper liners in a muffin tin
Mix the flour, sugar, baking powder, baking soda, and salt together in a bowl using a whisk
In a different bowl, mix the softened butter and cream cheese together until the mixture is smooth and creamy
One at a time, add the eggs to the creamed mixture and beat well after each one
Add vanilla extract, lemon juice, and lemon zest and mix well
Slowly add the dry ingredients to the wet ones, mixing them in with milk every so often
Start with the dry ingredients and end with the milk
Don't mix any further than that
Fill up about two thirds of the way to the top of each muffin cup with batter
Put muffins in the oven and bake for 18 to 20 minutes, or until a toothpick inserted into the middle comes out clean
First, let the muffins cool in the pan for a few minutes
Then, move them to a wire rack to cool completely
To make the glaze, mix powdered sugar, fresh lemon juice, and lemon zest in a small bowl with a whisk
Add the glaze to the muffins after they have cooled
Serve and have fun!
