Ingredients:

  • 1 lb large shrimp, peeled and deveined

Instructions:

Preheat oven to 400F 200C

In a bowl, mix together garlic, olive oil, lemon juice, lemon zest, salt, and pepper

Add the shrimp to the bowl and toss until evenly coated

Spread the shrimp out on a baking sheet lined with parchment paper

Roast in the preheated oven for 8-10 minutes, or until the shrimp are pink and opaque

Ingredients:

  • 1 block firm tofu, cubed
  • 1 can coconut milk
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, sliced
  • 1 cup diced tomatoes
  • 2 tablespoons curry powder
  • 1 tablespoon soy sauce
  • 1 tablespoon maple syrup
  • 1 teaspoon ground ginger
  • 1/2 teaspoon turmeric
  • Salt and pepper to taste
  • 2 cups cooked rice, for serving
  • Fresh cilantro, for garnish

Instructions:

In a slow cooker, combine cubed tofu, diced onion, minced garlic, sliced bell pepper, diced tomatoes, curry powder, soy sauce, maple syrup, ground ginger, turmeric, salt, and pepper

Pour in coconut milk and stir to combine

Cover and cook on low for 4-6 hours, or until flavors are well blended and tofu is tender

Serve over cooked rice and garnish with fresh cilantro

Crustless Spinach Quiche



This spinach quiche doesn't have a crust, and it's tasty and healthy. It's great for breakfast, brunch, or any other meal of the day. It's easy to make and full of healthy foods like fresh spinach, eggs, and cheese.

Ingredients:

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 5 cups fresh spinach, chopped
  • 6 large eggs
  • 1/2 cup heavy cream
  • 1/2 cup shredded cheese cheddar, mozzarella, or your choice
  • Salt and pepper, to taste
  • 1/4 teaspoon ground nutmeg optional

Instructions:

Preheat your oven to 375F 190C

Grease a 9-inch pie dish with olive oil

In a skillet, heat olive oil over medium heat

Add diced onion and minced garlic, and saut until softened, about 3-4 minutes

Add chopped spinach to the skillet and cook until wilted, about 2-3 minutes

Remove from heat and let cool slightly

In a mixing bowl, whisk together eggs, heavy cream, shredded cheese, salt, pepper, and ground nutmeg if using

Stir in the cooked spinach mixture until well combined

Pour the mixture into the prepared pie dish

Bake in the preheated oven for 25-30 minutes, or until the quiche is set and the top is golden brown

Remove from the oven and let it cool for a few minutes before slicing

Serve warm or at room temperature, and enjoy this delicious crustless spinach quiche as a satisfying keto-friendly meal!
