Ingredients:
- 2 cups grated sweet potatoes
- 1 cup all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 2 large eggs
- 1/2 cup milk
- 2 tbsp olive oil
- 1/4 cup fresh cilantro, chopped
- 1/4 cup red onion, finely chopped
- 1/4 cup grated Parmesan cheese
- For Chimichurri Sauce:
- 1 cup fresh parsley, finely chopped
- 1/4 cup fresh cilantro, finely chopped
- 3 cloves garlic, minced
- 1/4 cup red wine vinegar
- 1/2 cup olive oil
- Salt and pepper to taste
Instructions:
Follow the directions that came with your waffle iron to get it hot
Grate the sweet potatoes and mix them with the all-purpose flour, baking powder, salt, and black pepper in a large bowl
Add the eggs, milk, and olive oil to a different bowl and mix them together using a whisk
Add the wet ingredients to the dry ones and mix them together until everything is well mixed
Cut up the cilantro, red onion, and Parmesan cheese, and then add them to the bowl
Grease the waffle iron with oil or cooking spray that doesn't stick
Place the waffle iron that has been heated up and the sweet potato waffle batter on it
Follow the maker's instructions for cooking until the waffles are golden and crispy
You can make the chimichurri sauce while the waffles are cooking
Cut up the parsley, cilantro, garlic, red wine vinegar, and olive oil and put them in a bowl
Add pepper and salt to taste
Combine well
When the waffles are done, put a lot of chimichurri sauce on top of them while they are still hot
